A delicious dessert that is rustic and simple
Certain foods in this world are of incredible comfort, like apple pie and banana bread. My Mémère liked a good loaf of banana bread from time to time, and she always liked that extra crunch, so she would add walnuts.
When it’s fresh out of the oven, slather some butter on it, and you’ll be in heaven!
Prep time: 10 minutes
Bake time: 50-55 minutes
Ingredients
- 1/2 cup butter
- 3/4 cup sugar
- 1 Tbsp vanilla
- 2 eggs, whisked
- 3 large ripe bananas, mashed
- 1/2 cup milk
- 2 cups flour
- 1 cup chopped walnuts
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon

Preparation
Beat sugar and butter together, adding vanilla and whisked eggs one at a time. Then add milk and bananas. Slowly incorporate dry ingredients (flour, walnuts, baking soda, salt and cinnamon) and beat until thoroughly blended.
Grease and flour bread pan (using either Pam or butter), baking at 175 degrees C (350 degrees F) for 50-55 minutes or until the toothpick (or knife) inserted in the middle comes out clean. Note that older ovens cook at uneven temperatures, so check the bread loaf to see if it’s cooked starting at 45 minutes.
